Cooking With Miranda - Leprechaun Ice Cream Pie

Next week is St.Patrick's Day, which means it is time to look for those pesky little leprechauns. To get you into the spirit, I bring you an easy peasy, but delicious 'Leprechaun Ice Cream Pie'.
Ingredients for Graham Cracker Pie Crust
6 Tbsp Butter, melted
24 Graham Crackers
1/4 cup Sugar
Ingredients for Filling
1 Cup Whole Milk
1 Cup Softened Pistachio Ice Cream (I like Ben & Jerry's Pistachio Pistachio!)
I Package Instant Pudding - Pistachio
Method
Graham Cracker Pie Crust (Store bought works too!)
Melt 6 tablespoons of butter.
Place the crackers inside a plastic bag and roll with a rolling pin until finely crushed.
Measure 1 1/2 cups of the crushed crackers and place it inside a mixing bowl. Add the /4 cup of sugar and melted butter and mix well (Best way to do it is with your hands!).
Press into a pie plate and bake for 8 to 10 minutes in an oven pre-heated to 350 degrees. Allow to cool.
Filling
Scoop out a cup of Pistachio Ice Cream from the freezer and allow it to soften for 30-45 minutes.
Putting it all together
In a large mixing bowl, add the softened ice cream and cold miik. Add the pudding mix. Beat all the ingredients with a mixer on low speed, for about one minute, until smooth. Pour mixture immediately into the pie crust and spread evenly.
Garnish with un-shelled pistachios or whatever you like and place the pie in the freezer for about 2 hours or until firm. Slice and Enjoy. Cover the leftovers with aluminum foil and store back in the freezer.
